The Glorious New Dessert Menu at Herb & Wood Happens to be Gluten-Free

Made in San Diego: Andrea’s Truffles Hand-Painted Bonbons & Chocolate Bars Infused with Local Flavor
Eight years ago, Andrea Davis was just starting out in the truffle business, dipping small batches to order in her home kitchen. Now, the enterprising artisan is running a burgeoning chocolate business with a catalog encompassing 14 different truffle flavors—including lemon crème fraiche, peanut butter crunch and passion fruit—as well as products ranging from “chocolate crack” to mendiants.
She recently added bonbons and chocolate bars to the lineup, many of which feature distinctive local ingredients.
“I decided to utilize what I’d learned. After six years of doing truffles, it was time to branch out and try something new,” she explained, crediting a series of workshops at the Barry Callebaut Chocolate Academy in Chicago and the Melissa Coppel Chocolate and Pastry School in Las Vegas with giving her the skills and confidence she needed to expand her product line.
Andrea’s new bonbon flavors include dark chocolate with sea salt, chocolate orange with orange essence and cocoa nibs, and a caramel pecan with candied nuts housed inside a creamy milk chocolate shell.
Each flavor is hand-painted with brightly colored swirls and speckles and packaged in an elegant sleeve. A six-piece variety pack with chocolate mint and cookies and cream will also be available soon.
The new dark chocolate bars include a surprisingly spicy Chocolate & Roses flavor featuring cardamom, cayenne and cinnamon, topped with edible rose petals, toasted almonds and pistachios.
Orange and chocolate lovers should try the Orange Nectar, a 70 percent dark bar with candied orange zest sourced from Loews Coronado’s nectar garden, and tangy balsamic flakes.
A third new bar—dubbed the Snack Attack—is expected to debut at Supernatural Sandwiches’ Miramar location later this month. The munchable creation features caramelized white chocolate (which has a flavor profile similar to browned butter) with peanut brittle, potato chips and pretzels.
