Waste Less Cooking: Avocado Feta Ranch Dressing

Don't throw away that discolored avocado or the juice left in your feta container. This recipe from chef Keith Lord will turn your scraps into a luscious dressing.

Ingredients

SERVINGS: 3/4 Cup(s)
  • 2 large bruised, overripe avocados, halved, seeded, and skinned
  • 1/4 cup liquid from feta cheese
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon granulated garlic
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon dried chives
  • pinch kosher salt
  • to taste Cracked black pepper

Instructions

In a food processor or high-speed blender, combine avocado, feta liquid, lemon juice, garlic, parsley, dill, chives, and salt; pulse in short spurts until combined.

Season to taste with black pepper. Adjust consistency by adding more avocado to thicken the dressing or more feta liquid to thin it.
