Naturally Vegan: Easy Stovetop Apple Crisp

This easy apple crisp doesn’t even require an oven, that fact, combined with the perfect pairing of sweet cinnamon apples and crisp and nutty topping, make it one of my go-to winter dessert recipes. (Vegan and free of soy, peanuts, dairy, eggs, gluten)

Ingredients

SERVINGS: 5-6 Serving(s)
Cinnamon-Apples
  • 6 small green apples, peeled and chopped (about 4-5 cups chopped)
  • 1/2 cup brown sugar or coconut sugar
  • pinch salt
  • 1 teaspoon cinnamon
  • 1 lemon, juice only
  • 1 tablespoon coconut oil
  • 1/2 teaspoon vanilla extract
Oat Crisp
  • 1 cup rolled oats
  • 1/2 cup pecans, roughly chopped
  • 1/4 cup brown sugar or coconut sugar
  • 2 tablespoons coconut oil or vegan butter
  • 1/2 teaspoon cinnamon
  • pinch salt
  • optional for serving vegan vanilla ice cream

Instructions

Add all cinnamon-apple ingredients into a large pan and place over medium heat. Cook for 5-6 minutes or until apples are tender. Remove from heat and set aside.

Combine all “crisp” ingredients in a large pan over medium heat. Stir continuously for 5-7 minutes or until golden brown.

To serve, simply scoop a generous helping of spiced apples into a bowl and top with toasted oat crumble. Add a scoop of vegan vanilla ice cream, if you like.
