Seasonal Snack: Apples, Parmesan and Toasted Seeds

Crisp local apples paired with sharp cheese, sticky honey and toasted seeds make the perfect snack or salad topping this season.

Ingredients

  • 2 tablespoons seeds, mix of sunflower, sesame, flax, chia
  • 2 Fuji apples, cored, cut into 1/4" slices
  • small wedge of Parmigiano-Reggiano
  • 1 tablespoon local raw honey

Instructions

Heat a medium-size pan over medium-high heat. Add seeds and stir to toast evenly. Remove from heat after 2 minutes, or when they become slightly aromatic. 

Arrange apples slices on a large plate.

Using a vegetable peeler, shave cheese directly over the apples. Use enough cheese to match the amount of apples.

Drizzle with honey and top with the toasted seeds.

Enjoy as a stand-alone snack, part of a charcuterie or cheese board, or combine with greens and a simple vinaigrette for an easy salad.
