Ingredients
- 1 tablespoon harissa
- 3 tablespoons olive oil, plus more for garnish
- 2 teaspoons salt, divided
- 1 eggplant, diced into 2" pieces
- 1 pint cherry tomatoes
- 1 cup greek yogurt
- 10 fresh mint leaves, chopped
- 1 clove of garlic, minced
Instructions
Heat grill or grill pan over medium high heat.
In a large mixing bowl, combine harissa, olive oil, and 1 teaspoon of salt. Add the eggplant and tomatoes to the harissa mixture. Toss to coat.
Thread eggplant and cherry tomatoes onto pre-soaked wooden skewers. Grill skewers for 5-6 minutes on each side, until slightly charred and tender.
To a clean mixing bowl add yogurt, 1 teaspoon of salt, mint, garlic, a glug of olive oil and a splash of water. Stir to combine.
Garnish skewers with more fresh mint and a drizzle of good olive oil. Dunk skewers in minty yogurt and enjoy.
