Dukkah-Spiced Tomato & Cucumber Salad with Feta

Hot summer days call for sweet heirloom tomatoes and crunchy Persian cucumbers paired with creamy feta and the Egyptian coriander, sesame, and nut-spice mix, dukkah. Find dukkah at any Middle Eastern market, and even at Trader Joe's.

Ingredients

SERVINGS: 4 Serving(s)
  • 1 pound heirloom tomatoes, cut into wedges
  • 1/2 pound Persian cucumbers, cut diagonally into 1/2 inch slices
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon dukkah, plus extra to garnish
  • 1/4 cup crumbled feta
  • Sea Salt & Black Pepper

Instructions

Arrange tomatoes and cucumbers on a serving platter.

In a small mixing bowl combine lemon juice, olive oil, and dukkah. Whisk to combine and season with salt and pepper to taste. Drizzle over vegetables.

Top with feta and garnish with additional dukkah.
