Ingredients
- 1 onion, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- ¼ teaspoon black pepper
- ⅓ cup of water
- Sliced country loaf or sourdough
- ½ cup shredded gruyere
- 1 tablespoon picked thyme leaves
Instructions
Over medium low heat, warm olive oil. Add onion, salt , and black pepper.
Keeping your heat low, cook onions, stirring occasionally, until they are carmelized and golden brown, roughly 15-20 minutes.
Add water and continue to cook, until the water has evaporated and onions are jammy. Repeat this step if needed. Add additional seasoning to taste.
Lightly toast a few slices of bread. Spread onion jam on toasts and top with shredded gruyere and sprinkle with thyme leaves.
Broil toasts in the oven until the cheese is melted, bubbling and golden brown.
Note: Extra onion jam can be used in scrambled eggs, swirled into greek yogurt for a simple dip, on burgers and sandwiches, or as the base of your pasta sauce.
