Offal: trimmings of a butchered animal removed in preparing it for market or for consumption; discarded or used in culinary preparations

When you buy a whole chicken, you’ll likely find a little pack of organ meats that sometimes includes a neck. Some people have favorite recipes for these offal pieces of chicken while others toss them in the trash.

If you’re one of the latter, here’s some inspiration for putting these chicken parts to good use.

You can separate these organs out into freezer bags for saving long term. Use the neck in your next batch of homemade bone broth. Collect the hearts and try James Holstag’s suggestion to yakitori-style skewer and grill the hearts with a teriyaki glaze.

Save up the livers for this chicken liver pâté, which might be more like a chicken liver and butter parfait to fans of such treats.
